1 tbsp cooking oil, 2 medium onion sliced thin, 2 green chillies minced, 1 tsp ginger garlic paste, ½ tsp turmeric powder, ¾ tsp red chili powder, 1 tomato finely chopped, 400 gm beetroot grated, 750 gm chicken cut into small-medium size, ½ tsp garam masala, 1 tsp Kasuri methi roasted, Salt to taste, a pinch of sugar
Heat oil in a pressure cooker and Saute the onion and green chillies. Add the ginger-garlic paste and saute for a minute, then one by one, add turmeric powder red chilli powder and sprinkle in some water.
Once the raw smell of the paste goes away, add the tomato and beetroot and saute in low flame for 5-6 minutes. Now add the chicken pieces, sugar and SaltSalt to taste.
Now cook for one whistle on high and then simmer for 10 minutes. Sprinkle in the garam masala and Kasuri methi, mix well and Serve hot.
500 gm chicken with bone, ½ tsp turmeric powder, ¼ tsp red chili powder, 1 tbsp green chili paste refer notes, 1 tsp ginger garlic paste, SaltSalt to taste, 2 bunches spinach blanched and grounded, 2 heaped tbsp yogurt, 2 tbsp oil, 1 tsp cumin seeds, 2 cloves, 2 medium onions minced, ¼ tsp garam masala
Marinate the chicken with turmeric powder, red chili powder, green chili paste, ginger garlic paste and SaltSalt and set aside. In a saucepan, splutter the cumin and briefly fry the cloves.
Add the onions and saute till browned, then add the marinade chicken and cook, occasionally tossing till almost cooked. Add the yogurt, spinach paste and garam masala powder and cook till the chicken is thoroughly done.
Chicken Pasta in White Sauce
400 gm macaroni, 350 gm boneless chicken cut in small, SaltSalt and pepper to taste, 1 tsp garlic paste, 1 blob butter, 4 tbsp all-purpose flour, 400 ml milk, 1 tbsp oregano, 1 tbsp thyme, ½ tbsp paprika, 1 tbsp pepper powder, 2 chicken stock cubes, 1 cup frozen mixed vegetables (carrot, bell pepper, sweet corn).
Cook the pasta till they are soft. Add chicken with SaltSalt, pepper, and garlic in a boiler and boil for 10 minutes. Now, drain the chicken from its stock and set it aside.
In a large saucepan, heat the butter, add the all-purpose flour and saute just for a minute on low flame. Now add the milk and the reserved chicken stock and stir continuously until the mixture starts thickening.
Add in the oregano, thyme, paprika, pepper powder and stock cubes and continue to stir till the mixture thickens; then add the chicken and the vegetables and cook for 4-5 minutes on low flame. Finally, add the cooked macaroni and SaltSalt to taste, give it a mix and cook for 4-5 minutes and serve hot.
150 gm boneless chicken cut in small, 1 tsp ginger and 4 clove garlic finely chopped, butter, 1 tbsp pepper powder, 1 big onion roughly chopped, ½ cup carrot chopped, ½ cup capsicum and bell pepper chopped, ½ cup sweet corn, 2 tbsp dark soy sauce, SaltSalt to taste
In a saucepan, heat the butter, ginger and garlic and saute for a minute. Then add the chicken and SaltSalt and saute until half cooked. Now add the vegetables and fry till the raw smell goes away.
